Colorful Vegetable Medley with Chive Aioli

Ingredients

  • ½ cup low-fat sour cream
  • ¼ teaspoon salt
  • 3 tablespoons chopped fresh chives
  • Aioli:

  • 2 teaspoons olive oil
  • 4 beets (about 2 pounds)
