Corn-And-Crab Fritters

Ingredients

  • 1 pound fresh lump crabmeat
  • Criolla Rémoulade
  • ½ cup buttermilk
  • 3 tablespoons butter or margarine
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 ½ cups frozen whole kernel corn
  • + 10 more ingredients
    • 1 teaspoon salt
    • 1 tablespoon lime juice
    • 1 cup ricotta cheese
    • 1/3 cup chopped red bell pepper
    • 2 large eggs
    • Vegetable oil
    • 3 green onions, chopped
    • 1 cup yellow cornmeal
    • 1 teaspoon baking soda
    • 1 teaspoon pepper

Melt butter in a large skillet; add vegetables, and sauté 5 minutes. Combine cornmeal and next 5 ingredients in a large bowl. Combine eggs and next 3 ingredients; stir into cornmeal mixture.
