Corn and Garbanzo Bean Patties (Vegan)

Ingredients

    • ½ teaspoon salt
    • 2 tablespoons red bell peppers, minced
    • 1 tablespoon polenta (coarse cornmeal)
    • ¼ cup fresh lemon juice
    • 1/3 cup extra virgin olive oil
    • 5 ounces arugula leaves or 5 ounces mixed greens, rinsed and drained well
