Corn & Hominy Soup
Ingredients
- 2 can(s) - 15 ounce whole kernal sweet corn
- 2 can(s) - 15 ounce white hominy
- salt & pepper to taste
- 2 quart(s) water
- 3 stalk(s) celery - chopped
- 1 to large onion - chopped (medium)
- 4 pound(s) short ribs (no substitutes)
Combine in soup pot: water, meat, onion, celery, salt & pepper. Cover & simmer until meat is tender - 1 1/2 to 2 hours. Remove meat & bones from broth. Discard bones and fat. Shred meat and return to broth. Add corn & hominy. Simmer on low heat for 30 minutes. Ready to serve!
