  • 2 cups corn
  • 1/8 teaspoon black pepper
  • ½ teaspoon garlic
  • 2 medium zucchini (1 lb total)
  • ½ cup scallions
  • 2 tablespoons extra-virgin olive oil
  • ½ cup fresh cilantro
