Corn Boats with Zucchini and Pepper Jack Cheese

Ingredients

  • 1 cup coarsely grated Monterey Jack cheese with hot peppers
  • 1 cup red onion
  • 1 medium zucchini
  • 2 tablespoons olive oil
  • 4 ears corn
  • 2 tablespoons corn tortilla chips
