Ingredients

1 ½ cup(s) potatoes, finely diced. (one large baking or two small, may also use red potatoes)
7 ears of fresh sweet corn
1 large yellow onion, diced
3 slice(s) bacon, crisp and crumbled (optional)
2 tablespoon(s) olive oil
½ teaspoon(s) dried thyme
4 cup(s) whole milk

- 4 clove(s) garlic, minced
- salt and pepper to taste
- ½ cup(s) red pepper, chopped (optional)
