Corn, Cojita, and Black Bean Salad

Ingredients

  • fresh ground pepper to taste
  • salt to taste
  • ¾ extra virgin olive oil
  • ½ cup fresh lime juice
  • 1 tbls. ground cumin
  • 2 tbls. chili powder
  • ½ cup chopped fresh cilantro
  • + 7 more ingredients
    • ½ - 1 jalapeno pepper, minced (to taste)
    • 1 cup crumbles Cojita cheese
    • 1 red bell pepper, diced
    • 1 bunch of green onions, sliced thin
    • 3 cloves garlic, minced or 1 tsp garlic powder
    • 1 ½ cups fresh corn
    • 2 cans black beans, rinsed

Toss everything together. Serve cold or at room temperature. It actually tastes better after 1 day. Enjoy!
