Corn Fritters with Salsa

Ingredients

  • 1/3 cup white onion
  • 2 ½ tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 2 tablespoons fresh cilantro
  • sour cream
  • 1/3 cup yellow cornmeal
  • ½ cup milk
  • + 6 more ingredients
    • 1 large egg
    • 2 ears corn
    • 1 tablespoon fresh lime juice
    • 2 tablespoons pickled jalapeño chiles
    • 2 plum tomatoes
    • 3 tablespoons vegetable oil

Stir together all salsa ingredients and season with salt. Cut corn kernels from ears and scrape cobs to extract juice, then discard cobs.
