Cornbread with Scallions & Bacon
Ingredients
- Freshly ground black pepper
- 3 thick slices bacon
- 2 tsp. baking powder
- 1-¼ cups low-fat milk
- 2 Tbs. honey
- 1 large egg
- 1/3 cup corn oil

- 4-½ oz. (1 cup) unbleached all-purpose flour
- 1 cup yellow cornmeal, preferably stone-ground
- 1 tsp. table salt
Heat the oven to 400°F. In a large bowl, whisk the flour, cornmeal, baking powder, and salt.
