Cornish Game Hens with Pancetta, Juniper Berries and Beets
Ingredients
- 3 tablespoons olive oil
- 4 1 1/2- to 1 3/4-pound Cornish game hens, giblets removed
- 4 medium beets with greens
- 1 tablespoon juniper berries
- ½ pound 1/4-inch-thick pancetta
Position 1 rack in top third of oven and second rack in bottom third of oven and preheat to 375°F. Mix 1 1/2 cups chopped beet greens, pancetta and juniper berries in medium bowl.
