Cornish Hens with Roasted-Garlic Aoli

Ingredients

  • 1 small (13- by 9-inch) roasting pan
  • 1 teaspoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon black pepper
  • 2 Cornish hens (1 1/4 to 1 1/2 lb each)
  • 1 cup bottled mayonnaise
  • 2 teaspoons extra-virgin olive oil
  • + 4 more ingredients
    • 2 heads of garlic
    • 1 ½ teaspoons salt
    • 1 instant-read thermometer
    • 2 tablespoons fresh chives

Put oven rack in middle position and preheat oven to 500°F. Trim off and discard about 1/4 inch from top of garlic heads to expose cloves, then put heads on a sheet of foil.
