Ingredients

  • 1-½ lb. boneless, skinless skate wing
  • ¾ cup flour
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • 2 Tbs. chopped fresh thyme, more sprigs for decoration
  • 1 cup vegetable oil
  • 2 lemons, cut in wedges
  • + 3 more ingredients
    • ¼ cup chopped parsley
    • 1 cup buttermilk
    • ¼ cup yellow cornmeal
