Cornmeal-Fried Skate Wings
Ingredients
- 1-½ lb. boneless, skinless skate wing
- ¾ cup flour
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
- 2 Tbs. chopped fresh thyme, more sprigs for decoration
- 1 cup vegetable oil
- 2 lemons, cut in wedges

- ¼ cup chopped parsley
- 1 cup buttermilk
- ¼ cup yellow cornmeal
