Cornmeal Peach Shortcakes

Ingredients

  • ¼ cup yellow cornmeal
  • 4 tablespoons cold unsalted butter, cut into pieces
  • ½ cup heavy cream
  • 2 peaches, cut into 1/4-inch-thick slices
  • ¼ teaspoon salt
  • 1/3 cup milk
  • 1 ½ teaspoons baking powder
  • + 3 more ingredients
    • ¾ cup all-purpose flour
    • ¼ cup sugar
    • 1 tablespoon confectioners' sugar

1. Preheat oven to 425°F. In a mixing bowl, combine flour, cornmeal, baking powder, salt and 2 Tbsp. sugar. Add butter and cut in with fingers or a pastry blender until it resembles coarse meal.
