Cotton Pickin' Cake

Ingredients

  • 1 can(s) crushed pineapple, drained well (20 ounce can)
  • 1 box(es) yellow cake mix
  • ½ cup(s) oil
  • 4 eggs
  • 1 cup(s) pecans, chopped
  • 12 ounce(s) Cool Whip
  • 1 box(es) instant vanilla pudding (large box)
  • + 2 more ingredients
    • 1 can(s) mandarin oranges, undrained (11 ounce can)
    • PINEAPPLE FROSTING:

Mix together all ingredients. Place in 2 greased and floured cake pans. Bake at 350° for 25-30 minutes. Let cool before frosting. For PINEAPPLE FROSTING, mix Cool Whip and pineapple together, then add the dry pudding mix. Mix together with electric mixer. Spread on cooled cake.
