Couscous with Apple-Ginger Topping and Orange Sauce
Ingredients
- 2 tablespoons raisins
- Couscous:
- 2 cups diced peeled Granny Smith apple
- ¼ cup reduced-fat sour cream
- ¾ cup fresh orange juice
- 2 tablespoons finely chopped crystallized ginger
- 1 ½ tablespoons Triple Sec (orange-flavored liqueur)

- 2 teaspoons grated orange rind
- 1 ½ tablespoons Triple Sec (orange-flavored liqueur)

- ½ teaspoon ground cinnamon
- Mint sprigs (optional)
- Sauce:
- 1 cup uncooked couscous
- ¼ teaspoon salt
To prepare sauce, bring orange juice to a boil in a large saucepan; cook until reduced to 1/3 cup (about 6 minutes). Stir in 1 1/2 tablespoons liqueur. Pour into a small bowl, and set aside.
