Ingredients

  • 1 ½ teaspoons salt, divided
  • 1 (10-ounce) can diced tomatoes and green chiles, undrained
  • 2 (16-ounce) cans pinto beans, drained
  • 2 tablespoons vegetable oil
  • 1 (14.5-ounce) can petite-cut diced tomatoes, drained
  • + 4 more ingredients
    • 1 (2 1/2- to 3-pound) eye of round roast, trimmed
    • 1 (15-ounce) can black beans, drained
    • Pickled jalapeño pepper slices (optional)
    • 1 tablespoon chili powder
