Crab and Roasted Red Pepper Strata

- 2 tablespoons fresh parsley
- 8 cups 1-inch bread cubes from crustless French bread
- 6 large eggs
- 1 cup roasted red peppers from jar
- 1 garlic clove
- 1 teaspoon salt
