Cracked Caramel-Pumpkin Pie

• ½ teaspoon pumpkin pie spice
• ¼ cup firmly packed brown sugar
• 2 egg yolks, lightly beaten
• 2 large eggs, lightly beaten
• 2 cups whipping cream, divided
