Cranberry-and-Apricot Chutney
Ingredients
- ¼ cup apple cider vinegar
- 1 (6 oz.) package dried apricots or peaches, quartered
- ¼ teaspoon crushed red pepper
- Pinch of ground allspice
- 1/3 cup finely chopped onion
- 1 cup packed light brown sugar
- Salt

- 1 cinnamon stick
- 2 tablespoons chopped crystallized ginger
- 1/3 cup chopped red or orange bell pepper
- 2 cups fresh or frozen cranberries
In a large saucepan, bring all ingredients to a boil over high heat, stirring occasionally. Reduce heat to medium and simmer, stirring occasionally, for 20 minutes.
