Ingredients

  • 2 cups boiling water
  • 2/3 cup chopped pecans,toasted
  • 1 (8-ounce) can crushed pineapple, undrained
  • 2 cups cranberry juice, chilled
  • Garnish: chopped pecans, toasted
  • Pickled peaches

    • 2 celery ribs, diced (1 cup)
    • 3 (3-ounce) packages raspberry-flavored gelatin
    • ½ cup sugar
    • Lettuce leaves
    • 1 (12-ounce) package fresh cranberries

Process cranberries in a food processor 30 seconds or until coarsely chopped, stopping once to scrape down sides. Stir together cranberries and sugar in a bowl; set aside.
