Ingredients

  • 1 teaspoon vanilla
  • 2 tablespoons crème fraîche or heavy cream
  • 1 pie shield
  • 3 cups pie weights or raw rice
  • ¼ cup sugar
  • 1 10-inch fluted metal quiche pan (2 inches deep) with a removable bottom
  • ¼ teaspoon salt

    • 3 tablespoons bourbon
    • ½ teaspoon freshly grated nutmeg
    • 2 large egg yolks
    • 1 small offset spatula
    • candied-orange and cranberry compote
    • 10 tablespoons sugar
    • ½ teaspoon salt
    • Cranberry jam
    • 1 large egg
    • 2 whole large eggs
    • ¼ cup water
    • 1 ¼ cups all-purpose flour
    • 7 tablespoons unsalted butter
    • 1 ½ 8-oz packages cream cheese

Pulse together all crust ingredients in a food processor just until a dough forms. Press dough evenly onto bottom and up side of quiche pan with floured fingers.
