Creamed Spinach 3


  • ½ cup(s) Scallions, minced
  • ¼ cup(s) butter
  • 2 pound(s) Spinach, wilted and finely chopped
  • Salt and Pepper to taste
  • 1 clove(s) garlic, minced
  • 1 cup(s) sour cream

In a large pot, sauté the scallions and garlic in butter until soft. Add the spinach and cook until heated through. Add 4 T sour cream. Let mixture cook down until more liquid as evaporated. Remove from heat and stir in remaining sour cream.
