Creamy Feta Vinaigrette
- Kosher salt and freshly ground pepper
- 2.5 tablespoon(s) red wine vinegar
- 0.5 teaspoon(s) dried oregano
- 3 ounce(s) feta cheese
- 0.25 cup(s) plus 1 tablespoon extra-virgin olive oil
- 1 tablespoon(s) water
In a food processor, pulse the crumbled feta with the red wine vinegar, water, oregano and olive oil until the vinaigrette is smooth. Season with salt and pepper.
