Creamy Lemon Frosting


  • ¼ cup lemon juice
  • About 5 ½ cups sifted powdered sugar, divided
  • ½ cup butter or margarine, softened
  • 1 tablespoon whipping cream
  • ½ teaspoon grated lemon rind

Cream butter and 2 cups sugar until fluffy. Add lemon rind, juice, and whipping cream, beating well. Gradually add remaining sugar, beating until spreading consistency.
