Ingredients

  • ¾ teaspoon black pepper
  • 1 cup sour cream
  • ½ to 3/4 cup heavy cream
  • 5 pounds white or Yukon gold potatoes, peeled and cut into 2-inch chunks
  • ¼ teaspoon ground nutmeg
  • 2 ½ tablespoons plus 1 teaspoon kosher salt
  • 12 tablespoons unsalted butter, cut into pieces, at room temperature
