Creamy Pumpkin and Cashew Curry

Ingredients

  • 4 ½ cups sugar pumpkin or butternut squash
  • 2 cloves garlic
  • 1½ cups canned unsweetened coconut milk****
  • ¾ cup unsalted roasted cashews
  • Steamed basmati rice
  • 2 small red onions
  • ½ teaspoon ground cumin
