Creamy Red Potato Salad

Ingredients

• 1 ¼ cups mayonnaise
• 2 tablespoons sweet pickle relish
• Salt and pepper
• 2 celery stalks, thinly sliced
• 1 onion, thinly sliced
• 2 tablespoons sweet pickle relish
• ¹/₃ cup whole-grain mustard

  • 4 pounds small red potatoes
  • Salt and pepper

  • 1 onion, thinly sliced

Place potatoes in a large pot and add enough cold water to cover by 1 inch. Bring to a boil over high heat, reduce to medium-low and simmer until potatoes are easily pierced with a fork, 30 minutes.
