Creamy Spinach Dip

Ingredients

  • 1 shallot, minced
  • 1 14-oz. container 2 percent Greek yogurt
  • 2 tablespoons chopped dill
  • Zest and juice of 1 lemon
  • 1 10-oz. package frozen chopped spinach, thawed and squeezed dry
  • 1 clove garlic, minced
  • Salt and pepper

Puree all ingredients in a food processor until smooth. Chill for 30 minutes. Serve with pita bread or crudités.
