  • 1 cup milk
  • ½ vanilla bean, caviar scraped (or 2 teaspoons pure vanilla extract)
  • ½ cup light or dark brown sugar
  • ¼ teaspoon kosher salt
  • 4 large egg yolks, room temperature
  • 1 cup heavy cream
  • ¼ teaspoon cinnamon
