Creole Ratatouille Recipe


  • 2 medium yellow squash, cut into ¾-inch dice
  • 2 medium zucchini, cut into ¾-inch dice
  • 1 tablespoon crushed red pepper
  • 1 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon chopped fresh chives
  • ½ tablespoon chopped fresh rosemary leaves
