Crispy Quinoa Sweet Potato Tacos

Ingredients

  • ½ cup organic quinoa
  • 1 cup water
  • pinch kosher salt
  • 1 cup loosely packed, fresh cilantro
  • ½ cup creme fraiche or sour cream
  • juice of ½ lime (about 2 tablespoons)
  • 1 clove fresh garlic

    • 1 medium sweet potato, peeled & cut into a ¼-inch dice (about 3 cups)
    • 1 small onion, thinly sliced
    • ½ teaspoon ground cumin

    • ½ teaspoon kosher salt
