Crispy Sweet Potatoes


  • 4 sweet potatoes (medium)
  • 1 egg white
  • ¼ teaspoon(s) salt

Preheat oven to 425°F. Scrub and cut sweet potatoes into quarters. Dip quarters into egg whites and place on greased baking pan. Bake for 20-25 minutes or until soft when pierced with a fork. Turn potatoes once during baking. Serve immediately.
