Crispy Sweetbreads

Ingredients

  • 1 teaspoon(s) dry Greek oregano
  • Pepper
  • 2 teaspoon(s) parsley, chopped
  • 2 lemons, juiced
  • 5 tablespoon(s) olive oil
  • ½ cup(s) flour, for dusting sweetbreads
  • 1 pound(s) sweetbreads, cleaned and soaked in water for 1 day

    • ¼ cup(s) salt, plus extra for seasoning
    • 1 cup(s) white vinegar
    • 4 cup(s) water

1. In a saucepot bring water, white vinegar, and salt to a boil. Add sweetbreads and cook for 9 minutes. Remove and cool. 2. In a sauté pan heat 4 tablespoons olive oil.
