Crunchy Wheat Berry Salad with Cranberries and Goat Cheese

Ingredients

  • ¼ cup sliced almonds
  • 3 ounce soft goat cheese, crumbled
  • salt and pepper to taste
  • 2 tablespoon maple syrup
  • ¼ cup balsamic vinegar
  • 1/3 cup olive oil
  • 2 garlic, minced

    • 2/3 cup dried cranberries
    • 1 shallots, sliced
    • 3 celery stalks, sliced
    • 2 cup wheat berries, dry

Bring 5 cups of salted water to boil. Rinse the wheat berries in cold water and then add them to the boiling water.
