Cucumber Feta Salad


  • 1 medium cucumber, sliced
  • 1 ½ cups feta cheese, crumbled
  • ¼ cup kalamata olives
  • Juice of ½ lemon
  • 3 tablespoons extra-virgin olive oil
  • ¼ cup fresh mint leaves, torn
  • 1 tablespoon dried oregano
  • + 2 more ingredients
    • 1 teaspoon freshly ground black pepper
    • Kosher salt

Arrange the sliced cucumber on a serving plate. Top the cucumber with the crumbled feta, and then the olives. Squeeze the lemon juice over the salad, and drizzle it with the olive oil. Garnish the salad with torn mint leaves, and season with the oregano, ground black pepper, and salt, to taste.
