Cucumber Frappés with Blackberries


  • 2 small seedless cucumbers—peeled
  • 6 mint leaves
  • pinch(s) of salt
  • 2 tablespoon(s) lime juice
  • 1 cup(s) ice cubes
  • 0.25 cup(s) sugar
  • 1 cup(s) plain nonfat yogurt
  • + 1 more ingredients
    • 1 pint(s) blackberries

In a bowl, lightly crush the blackberries with 1 tablespoon of the sugar. In a blender, combine the cucumbers, yogurt, ice, lime juice, mint leaves, salt and the remaining 3 tablespoons of sugar and blend. Spoon the berries and their juice into glasses. Pour the frappé on top and serve right away.
