  • 1 tablespoon brown sugar
  • 1 pound boneless sirloin steak (about 1 1/4 inches thick), trimmed
  • ½ teaspoon ground coriander seeds
  • ¼ teaspoon ground red pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • Cooking spray

Preheat oven to 450°. Coat an 8-inch cast-iron skillet with cooking spray. Place the pan in a 450° oven for 5 minutes.
