Ingredients

  • 8 lemon wedges (optional)
  • 2 tablespoons finely chopped peeled fresh ginger
  • 2 teaspoons olive oil
  • 2 tablespoons Mild Curry Powder
  • 1 cup whole-milk yogurt
  • 2 cups thinly sliced onion
  • 1 tablespoon minced garlic
  • + 5 more ingredients
    • Cilantro sprigs (optional)
    • 1 teaspoon salt
    • ½ cup finely chopped cilantro stems
    • 10 cup cauliflower florets (2 medium heads)
    • 1 cup chopped seeded peeled tomato

Heat the oil in a Dutch oven over medium-high heat. Add onion and ginger; cover and cook 3 minutes, stirring frequently. Reduce heat to medium.
