Curried Sweet Potato-Apple Pilaf

Ingredients

  • 1 cup water
  • ¼ cup chopped green onions
  • ¼ teaspoon salt
  • 2/3 cup diced peeled sweet potato
  • 2 tablespoons currants
  • 1 ½ teaspoons olive oil
  • ½ teaspoon ground cumin
  • + 5 more ingredients
    • 1 garlic clove, minced
    • ½ cup uncooked long-grain rice
    • 1 cup cubed peeled Granny Smith apple
    • ¾ teaspoon curry powder
    • ¼ cup frozen green peas

Heat oil in a medium saucepan over medium-high heat. Add onions and garlic; sauté 1 minute. Stir in rice; sauté 1 minute. Add water and sweet potato; bring to a boil.
