  • ¾ cup whole milk
  • ¾ cup heavy cream
  • 1/3 cup superfine sugar
  • ½ vanilla bean
  • 4 ½ ounces dark (70% cocoa solids) chocolate
  • 2 cardamom pods

Melt the chocolate in a heatproof bowl over a pan of barely simmering water, making sure the bowl doesn't touch the water.
