Ingredients

  • 6 ounces bittersweet (not unsweetened) chocolate
  • 1/3 cup whipping cream
  • ½ cup fresh kumquats
  • ¼ cup water
  • ½ cup sugar
  • 3 large egg whites

Melt 6 ounces bittersweet chocolate with 1/4 cup water in heavy small saucepan over low heat, whisking until smooth. Cool to just barely lukewarm, about 10 minutes.
