Ingredients

  • 1 tablespoon unsalted butter
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 deep-fat thermometer
  • 8 cups vegetable oil
  • 1 ½ cups coarse fresh bread crumbs (from firm white bread)
  • 3 ounces thinly sliced serrano ham or prosciutto
