Diabetic Smackeroons


  • ¼ cup(s) shredded coconut
  • 3 cup(s) rice krispies
  • 2 teaspoon(s) sweetener
  • ¼ teaspoon(s) maple or almond flavoring
  • ¼ teaspoon(s) cream of tartar
  • 3 egg whites

Beat egg whites until foamy. Add cream of tartar and continue beating until stiff but not dry. Add sweetener and flavoring, beating until well blended. Fold in cereal and coconut. Drop by teaspoon on lightly greased cookie sheet. Bake at 350° for 12-15 minutes.
