  • 6 oz. almond paste (not marzipan) (150 grams)
  • 1 c. orange marmalade or apricot jam

    • ¼ tsp. potassium carbonate (food grade potash, pearl ash, Pottasche)*
    • ½ tsp. ammonium carbonate (baker's ammonia or Hirschhornsalz)*
    • 2/3 c. ground almonds (50 grams)
    • 1 T. Lebkuchen spice mix or similar
    • 2 2/5 c. flour (300 grams)
    • 5 T. water
    • 1 egg yolk
    • 2 T. butter (25 grams)
    • 5/8 c. sugar (125 grams or 10 tablespoons)
    • ½ c. honey (125 grams)
