Doña Carmen's Garlic Rice


  • 1 ½ teaspoons salt
  • 2 cups uncooked long-grain rice
  • 3 ¼ cups water
  • 1 ½ teaspoons olive oil
  • 6 garlic cloves, crushed

Heat oil in a medium saucepan over medium heat. Add rice and garlic to pan; cook 3 minutes, stirring frequently. Stir in 3 1/4 cups water and salt; bring to a simmer. Cover, reduce heat to medium-low, and cook 20 minutes or until liquid is absorbed. Fluff with a fork before serving.
