Ingredients

  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¾ teaspoon salt
  • 1 cup all-purpose flour (about 4 1/2 ounces)
  • ½ cup packed brown sugar
  • ½ cup coarsely chopped, peeled Granny Smith apple
  • ¼ cup unsweetened applesauce

    • 1 ½ teaspoons baking powder
    • ¾ cup fat-free milk
    • 1 large egg white
    • 1 tablespoon molasses
    • ¼ cup butter, softened
    • 1 large egg
    • 1 ½ cups oat bran

Preheat oven to 400°. Place 12 paper muffin cup liners in muffin cups; set aside.
