Ingredients

  • 1 tablespoon olive oil
  • ½ cup minced onions
  • 1 ear of sweet corn, scraped from the cob
  • 1 tablespoon minced shallots
  • 2 teaspoons chopped garlic
  • 1 roasted duck breast, (8 to 10 ounces) pulled
  • 1 cup cooked black beans

    • 1 cup cooked white rice
    • 1 tablespoon chili powder
    • 2 teaspoons cumin
    • 1 cup duck or any dark meat stock
    • Salt and black pepper
    • 1 tablespoon chopped cilantro
    • 6 large flour tortillas
    • 12 toothpicks
    • Oil for frying

    • ½ cup grated Cheddar cheese
    • ½ cup grated Monterey Jack cheese
    • 1 cup Jalapeno Sour Cream
    • 2 ½ tablespoons paprika
    • 2 tablespoons salt
    • 2 tablespoons garlic powder
    • 1 tablespoon black pepper
    • 1 tablespoon onion powder
    • 1 tablespoon cayenne pepper
    • 1 tablespoon dried leaf oregano
    • 1 tablespoon dried thyme
