Duck on Mixed Greens

Ingredients

  • red wine vinaigrette
  • ½ cup(s) grape tomatoes
  • ¼ cup(s) sweet yellow pepper, diced
  • ¼ cup(s) sweet red pepper, diced
  • 4 duck breast halves (4 ounces each), skinned and boned
  • salt and pepper to taste
  • ½ cup(s) croutons

Preheat oven to 450° F. Coat a large skillet with vegetable cooking spray. Place duck breasts into prepared skillet and brown lightly, approximately 1 to 3 minutes on each side. Coat a baking dish with vegetable cooking spray, put the duck in baking dish, and bake for 20 minutes, or until done....
