Duck with plum sauce and spiced red cabbage


  • 100g/3½oz duck breast, skin scored
  • salt and freshly ground black pepper
  • 2 tbsp soy sauce
  • 125ml/4½fl oz red wine
  • 1 plum, stone removed, sliced
  • 1 tbsp white wine
  • 2 tsp caster sugar

    • dash red wine vinegar
    • 25g/1oz butter
    • ½ red cabbage, finely shredded
    • 2 tsp red wine vinegar
    • 1 tbsp soft brown sugar
    • 1 tbsp honey
    • pinch ground cinnamon
    • pinch ground mixed spice
    • water, as required
